Recipe {Fruit Salsa}

Howdy!

Today I'm going to share something not typically posted on my blog - a recipe! If you know me at all personally, you know that I am not the cook in our house. Stephen is. He enjoys it and is really good at it. I, on the other hand, do not enjoy cooking. I can do just fine if I have specific instructions, but meal planning outside of the frozen pizza - BLT - macaroni cheese range is just not my thing.

A few days ago we were invited to a Labor Day picnic to celebrate the last day of summer. Stephen volunteered to make bruschetta. My usual contribution in a situation like this is fruit salad - just cut up the fruit and toss. Easy enough. But I wanted to make something a little different. I remembered earlier this year my friend Jess brought an amazing fruit salsa dish to pass at our Cinco de Mayo party. She had sent me the recipe, so I decided to find it and go for it. It was de-lish!

Here's what you need:


Directions (from Annie's Fruit Salsa and Cinnamon Chips recipe on all-recipes.com):

  1. In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
  4. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.
